This is a recipe that I found on Pinterest. Click HERE if you would like to access the Pinterest recipe. I do not cook the green beans with the chicken and potatoes because they are not good the next day. They retain too much butter and taste like a soggy, nasty mess.
For us, this recipe is one that was pretty blah until I added the lemon juice and extra spices listed below. I hope you will try this "kicking chicken." Husband thinks it is to die for! It is by far one recipe that definitely goes onto our meal planning list each week.

Italian Lemon Chicken Breast
Ingredients:
- Skinless, Boneless Chicken breasts (Large, thick in size. The thin breasts do not absorb the seasoning as well. Also, they dry out quickly.)
- Lemon juice if desired
- Webber Garlic and Herb Marinade Mix (I have only been able to find this packet at Publix.)
- Butter (Instead of butter, use olive oil if desired.)
- Potatoes
- Extra Seasoning if desired (The extras I used are listed below.)
This Webber Garlic and Herb packet is the key ingredients, friends! It is $1.18 at Publix. I normally buy about five packets when I see them because they sell fast in our area store. (I actually used the McCormick Italian Herb Chicken packet when I first attempted this recipe. The seasoning was not near as good as the Webber packet.)
Chicken Directions:
To start, I season the chicken first. I add the Webber packet, which is only garlic spices. Then, I add additional seasoning since we enjoy eating things that are a bit more tangy and spicy. Add the desired amount for your family's taste. Next, I add lemon juice and butter for additional moisture and taste. I cannot tell you the exact amount that I add because I honestly "eye ball" it. Paula Dean is rubbing off on me. :)
Potatoes Directions:
Last, I cut the potatoes into a cross making four cubes. I use the red and yellow mixed potatoes. I leave the skin on. Drizzle with extra virgin olive oil or butter, and coat with a package of Webber garlic and lemon spice. I normally add minced onion for flavor, then salt and pepper to taste. Top with grated cheese when ready to serve.
Normally, I cook the potatoes and chicken together in a 9X13 casserole dish. You can cook them separately, too. Since these two items take the longest amount of time, I then do the vegetables.
Cook both at 350 degree in oven for 60 minutes.
On a side note: I was recently introduced to "Big Oven." It is a recipe app, but there is also a website. It is wonderful!! I use Pinterest on many occasions when determining our meals for the week. However, I am slowly finding myself on the Big Oven website often. It allows you do make a grocery list, meal plan via calendar, and so much more!
