Before I dive into this second Christmas post recap I want to give a little help and info to those of you who have tried to find and follow our page on Facebook.
It has been brought to my attention that there are multiple Facebook Pages called "Love.Laughter.Happily Ever After".
The easiest way to find our page when searching is to type my name in parenthesis like this: "Love, Laughter, Happily Ever After (KALYN)"
The profile photo is brown and says: "To Love, Laughter, and Happily Ever After". Our cover photo is a picture of Tony and I with out wedding party in front of the church where we were married.

Well, Christmas has come and gone all too quickly. One thing that remains is the remnants of all the food I consumed within the last ten days on my bottom half! I am not sure about all of you, but of course there were wonderful sweet treats to sample at each gathering within each of our family visits. From Louisiana to Alabama, I plan to share today a few simple, well known recipes for the next round of holidays or social gatherings. Honestly, these sweet treats can be made anytime of the year. Attempt to get in the kitchen and have some fun. It is okay if the recipe does not work the first time, always try again.
Cornflake Candy is another heritage recipe you may remember from your grandmother. They are a simple blend of sugar, corn syrup, peanut butter and cornflake cereal that are a Christmas classic. Cornflake candy is super easy to make on a short time frame during the hustle and bustle of the holidays. It is a bake free recipe, travels well and is the perfect night time snack, too (our guilty pleasure)!
I have seen different recipes calling for certain amounts of ingredients for certain portion sizes. Plan according depending upon the amount of candy that you will need. Have fun with this recipe and add whatever your heart may desire. I have seen multiple concoctions via Pinterest drizzled with white chocolate, dark chocolate, marshmallows, and even M&Ms. I am sure all masterpieces are delicately delicious! I had to make this recipe three!! times to master it. Do not feel bad if you have to try, try again!
Peanut Butter Cornflake Candy
Ingredients:
- 1 Bottle Karo
- 1 Cup Sugar
- 3/4 Peanut Butter
- 12 oz Corn Flakes (1 Regular Sized Box)
- You will also need a small pot and wax paper.
- Line baking pan with wax paper and butter it, set aside.
- Measure corn flakes into a large bowl, set aside.
- Bring sugar and light corn syrup to a boil. Do not let it overheat or stick to pot.
- Remove from heat, stir in peanut butter and mix well.
- Pour over corn flakes and coat well.
- Drop onto prepared pan with wax paper ans separate into pieces.
- Let cool, store in airtight container.
This is my father-in-law. He ran through the recipe and instructions once again in hopes that I could master it once we got home after our holiday travels.
What I love so much about this recipe is that it can be changed up depending upon the holiday being celebrated. Toppings such as red, pink, and white M&Ms (Valentine's), orange and yellow M&Ms (Halloween), carmel syrup, colored sprinkles, candy-coated chocolate candies, candy corn, semisweet chocolate chips, salted or honey-roasted peanuts, shredded or flaked coconut, (if desired, tinted orange or pink depending upon the holiday). Let your baking imagination soar on this recipe. Can you say "nom nom" ? :)
Jingle Bell Pizza
Ingredients:
- 1 Cup M&Ms
- 1 Roll Cookie dough
- Marshmallows
- Chocolate fudge syrup
- 1/3 Cup Semisweet Chocolate Chips, Melted
- You will need Pam Spray and a Pizza Pan
- Heat oven to 350°F.
- Stir cookie mix, oil and egg in medium bowl until soft dough forms.
- Press dough in ungreased 12-inch pizza pan, forming a narrow rim around edge of pan.
- Sprinkle choice of toppings on dough; sprinkle coconut over toppings.
- Bake 10 minutes.
- Sprinkle marshmallows on top.
- Bake 10 to 15 minutes or until marshmallows are lightly browned and cookie is set at edge.
- Cool completely in pan, about 1 hour.
- Drizzle melted chocolate over top.
- Cut into 12 wedges
Even the smallest of children can help with the two recipes above! Start those traditions and get everyone in the family involved. From our families homes this holiday season to yours next year, happy baking! I hope you all will enjoy.
Last but certainly not least, I thought I would share these two photos from our travels. These two photos are store bought sweet treats. However, no matter if you buy it or bake it, it is bound to be consumed when in large groups visiting with family and friends.
Who does not love tea cakes? Better yet, who does not love Christmas decorated tea cakes? These were to die for, as always! We even took some with us from Louisiana for our travels to Alabama. Of course they did not last very long! These little cookies are some kind of heavenly. (Don't you just love all of the festive little decor pieces on the table behind these sweet treats. Such a cute little area!)
Finally, to the tri-can of caramel, butter, and cheddar popcorn. This may sound ridiculous but I am going to be honest-- I walked by this popcorn can at Walmart for about two weeks before I finally broke down and bought it. I wanted caramel popcorn some kind of bad and our Walmart is not legit enough to carry any prepackaged. Regardless, I am glad I waited until the week of Christmas because I saved some money and our can actually came with 2 free coasters, a bottle opener, and a hugger for a cold drink. This was the best 6 hour car ride snack that I could find last minute. Now, I have a decorative can for next year when it is time to bake holiday goodies.
